Instant Pot Loaded Mashed Cauliflower

I love loaded mashed potatoes, but I don’t eat them much anymore because of the big calorie punch. It has all the flavor of loaded mashed potatoes, but it’s a lot more carb- and calorie-friendly. Woot!

Try this super simple, loaded mashed cauliflower as a healthier, low carb alternative that the entire family will enjoy. It also makes a great holiday side or potluck addition. The possibilities are endless!

A single cup of cauliflower contains only 25 calories, but 77 percent your daily allowance of Vitamin C, with high levels of Vitamin K, and B6. There are only 2.9 grams of net carbs in an entire cup of this popular low carb vegetable, making it a clear winner on a low-carb or keto diet.

Ingredients:

  • 1 medium head cauliflower, cut into florets
  • 1 cup water

Mash Mixture:

  • 1 tbsp butter
  • 1 tbsp sour cream
  • 1 1/2 tsp kosher salt
  • 1 tsp garlic powder
  • 1/4 tsp mustard powder
  • 1/4 tsp chili powder
  • 1/4 tsp pepper

To Finish:

  • 3/4 cup shredded cheddar
  • 1/4 cup grated parmesan
  • 5 slices bacon, cooked and crumbled
  • 2 scallions, green parts only, sliced

Instructions:

  1. Pour 1 cup of water in the pot, followed by steam rack.
  2. Load cauliflower florets into a steamer basket (this one works great: https://amzn.to/2CDxNd1) and lower on to steam rack, then secure the lid, making sure the vent is closed.
  3. Using the display panel select the MANUAL function*. Use the +/- keys and program the Instant Pot for 3 minutes.
  4. Meanwhile, add Mash Mixture ingredients to a food processor or blender.
  5. When cooking time is up, quick-release the pressure.
  6. Carefully drain the cooking liquid and transfer cauliflower to the food processor or blender. Process to desired consistency and adjust seasonings as needed.
  7. Transfer the cauliflower to a 7’ x 11” baking dish or shallow casserole.
  8. Top with cheeses and cooked bacon pieces. Set under a broiler 5-7 minutes or until cheese is lightly browned.
  9. Remove from oven and allow to cool slightly until set. Sprinkle green onions over the top and serve.

*The MANUAL and PRESSURE COOK buttons are interchangeable.
