Instant Pot Fall-Off-The-Bone Baby Back Ribs

You will never, ever, experience more tender baby back ribs than the ones you make in an Instant Pot. Some kind of crazy magic happens under that lid! If you’re a fan of ribs that fall smooth off the bone . . . you’re in for a heavenly experience.

These ribs are rubbed down with spices and cooked in a smoky, savory mix that is simply irresistible. You can have unforgettable ribs and tender corn on the table in just 45 minutes.

And did we mention corn? Yes, pop some corn on the cob into the same pot while the ribs are getting sauced up and you have a one-pot meal that’s sure to please.

Want to do two racks at once? No problem! Two racks will easily fit in a 6 quart Instant Pot. Double the Rub ingredients and the bbq sauce, but keep everything else the same. Roll the two racks together like interlocking letter C’s and set them upright in the Instant Pot.

Ingredients:

  • 1/4 cup brown sugar
  • 2 tbsp chili powder
  • 2 tsp dried parsley
  • 1 tsp each: salt, pepper, cumin, garlic powder, onion powder
  • 1/4 tsp cayenne
  • 1 rack of baby back pork ribs, membrane removed
  • 1 cup water
  • 1/2 cup apple cider vinegar
  • 1/4 tsp liquid smoke
  • 1/2 cup bbq sauce
  • 1 cup water
  • 4-6 ears of corn, shucked, ends trimmed and broken in half

Directions:

  1. Combine the first nine ingredients in a small dish. Rub on the front of the ribs.
  2. Pour 1/2 cup of water, apple cider vinegar and liquid smoke in the bottom of the pot and then place the trivet in the pot.
  3. Place the ribs inside the pot, standing on their side, wrapping around the inside of the pot.
  4. Using the display panel select the MANUAL function*. Use the +/- buttons and program the Instant Pot for 25 minutes.
  5. When the time is up, let the pressure naturally release for 10 minutes, then quick-release the remaining pressure.
  6. Carefully remove the ribs from the pressure cooker and set on a foil-lined baking sheet. Brush with BBQ sauce and set under the broiler until sauce begins to caramelize, about 5 minutes.
  7. While the ribs are under the broiler, clean the Instant Pot and refill with 1 cup of water, the trivet and the corn. Do not overfill the pot.
  8. Using the display panel select the MANUAL function*. Use the +/- buttons and program the Instant Pot for 3 minutes.
  9. When the time is up, quick-release the pressure.
