Instant Pot Delightfully Baked Apples

This simple recipe is packed with fresh, sweet and tart apples and a healthy does of spices. You will flip over how amazing your house smells when they are ready.

Easier than apple pie, baked apples should always be your back-pocket dessert. They are wonderfully warming when the weather is chilly, but are equally delicious when the kitchen is hot and the thought of heating up the oven for a dessert sounds like a bad idea.

Ingredients:

Filling Mixture:

  • 1/4 cup raisins
  • 1/4 cup dates (or golden raisins, apricots or prunes), chopped
  • 1/4 cup hazelnuts, chopped
  • 2 tsp cinnamon
  • 2 tbsp brown sugar 
  • 6 small apples (empire, honeycrisp or jonathan are best)
  • 4 tbsp butter
  • 2/3 cup Water

Instructions:

  1. In a small bowl, mix Filling Mixture ingredients.
  2. Using a melon baller or paring knife, remove the apple cores, leaving the bottom 1/2″ of the apples intact.
  3. Fill apples with filling mixture and top each with a thin slice of butter.
  4. Pour 2/3 cup water in the Instant Pot and arrange the apples in the bottom of the pot. Add any extra butter to the cooking water.
  5. Secure the lid, making sure the vent is closed.
  6. Using the display panel select the MANUAL function*. Use the +/- keys and program the Instant Pot for 3 minutes.
  7. When the time is up, let the pressure naturally release for 5 minutes (10 minutes for extra-tender apples), then quick-release the remaining pressure.
  8. Serve warm.

*The MANUAL and PRESSURE COOK buttons are interchangeable.
