Instant Pot Chili Lime Steak Bowl

Whether you’re home late and need a quick, healthy dinner, or are craving something spicy for a weekend lunch, this recipe delivers. This gorgeous combo features cool, fresh chunks of avocado with flavorful morsels of beef, all in less than 20 minutes.

Need to feed a crowd? This recipe doubles easily. Double all the ingredients, but keep the cooking time the same. You can also amp up the spice factor by doubling the chili powder before you cook, or by adding additional hot sauce after you cook.

Don’t have fajita steak? No worries. You can use practically any kind of beef in this, from a piece of sirloin to leftover uncooked chuck roast. Just make sure the beef is cut into an even 1/2″ dice.

Ingredients:

  • 1 tbsp olive oil
  • 1 tsp garlic, minced
  • 1 tbsp water
  • 2 tsp lime juice
  • 1/2 tsp each chili powder, kosher salt, pepper
  • 1 tsp hot sauce (we like Cholula)
  • 1 1/2 lbs fajita steak strips, cut into 1/2” cubes
  • 2-3 avocados, diced

Instructions:

  1. Add olive oil to the Instant Pot. Using the display panel select the SAUTE function.
  2. When the oil is hot, add minced garlic. Cook and stir 1-2 minutes until garlic just begins to brown.
  3. Add all remaining ingredients (except avocado!) and mix well with wooden spoon, being sure to scrape any garlic bits from the bottom of the pot.
  4. Turn the pot off by selecting CANCEL, then secure the lid, making sure the vent is closed.
  5. Using the display panel select the MANUAL function*. Use the +/- buttons and program the Instant Pot for 10 minutes.
  6. When the time is up, quick-release the remaining pressure.
  7. Turn the pot off by selecting CANCEL, then using the display panel select the SAUTE function. Cook and stir, breaking up meat into small chunks, until liquid has been reduced by half.
  8. Allow to cool and serve in a bowl, surrounded by diced avocado.

*If your Instant Pot does not have a MANUAL function, use the Pressure Cook function.
