Looking for something different for your weeknight meal? You just found it!  Bang Bang Shrimp Pasta is tender shrimp and noodles served in a sauce that’s spicy, sweet and creamy all at the same time.

This one-pot meal is zesty and delicious…and it doesn’t leave you with a ton of cleanup. Fast, delectable and easy cleanup? What more could you ask for?

Pro Tip: For best results, use frozen shrimp that are marked “31-40” in size. That means there’s between 31 and 40 shrimp per pound. If you use thawed shrimp, add them after the cooking cycle is complete and then close the lid. The carryover heat will cook the shrimp in just a few minutes. Once the shrimp are opaque, mix in the sauce and serve.

Tender shrimp and noodles served in a sauce that’s spicy, sweet and creamy all at the same time.

Ingredients:

  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tsp smoked paprika
  • 4 cups water, heated
  • 12 oz dried spaghetti or linguine, broken in half
  • 1 lb frozen peeled and deveined shrimp

Sauce Mixture:

  • 1/2 cup mayonnaise
  • 1/2 cup Thai sweet chili sauce
  • 3 tbsp lime juice
  • 1 tsp salt
  • 1 tbsp sriracha sauce (or to taste)

To Finish:

  • Salt and pepper to taste
  • 1/4 tsp crushed red pepper flakes (optional)
  • 1/2 cup chopped italian parsley or 1/4 cup sliced scallions

Instructions:

  1. Add olive oil to the Instant Pot. Using the display panel select the SAUTE function.
  2. When oil gets hot, add the garlic and smoked paprika. Cook and stir for 1 minute.
  3. Add the heated water and deglaze by using a wooden spoon to scrape the brown bits from the bottom of the pot.
  4. Carefully fan the pasta in the pot (this helps prevent clumping) and ensure it is completely submerged.
  5. Add the frozen shrimp in a single layer–do not stir.
  6. Turn the pot off by selecting CANCEL, then secure the lid, making sure the vent is closed.
  7. Using the display panel select the MANUAL function*. Use the +/- keys and program the Instant Pot for 4 minutes.
  8. Meanwhile, combine the Sauce Mixture ingredients in a bowl.
  9. When the time is up, quick-release the remaining pressure. Stir the pasta, breaking up any clumps.
  10. Add the sauce to the pasta and adjust seasonings. Serve hot topped with chopped parsley or scallions.
