Instant Pot Creamy Tortellini and Chicken Soup

This is one of my favorite Instant Pot soups–get yours here: https://amzn.to/2QmSPR1. It’s so flavorful and yet so fast to make. You can have this fabulous one-pot meal on your table in only 30 minutes, and with only one pot to clean up!

Tender chicken, chunks of tomato and ribbons of kale punctuate this creamy broth. Serve with toasted Italian bread so you can soak up every drop–it’s insanely creamy delicious!

Want to amp up the vegetable content? Add one roughly chopped chopped zucchini and a diced carrot before cooking, or double the spinach (or kale!) at the end. Have vegetable haters at home? Leave the spinach out and you still have a delicious soup full of pillows of tender, cheesy tortellini and tangy tomatoes.

Pro Tip: If you are using frozen tortellini, wait a couple of minutes after adding the tortellini before adding the spinach or the spinach may lose its brilliant green color.
