Instant Pot Arroz con Leche

Rice puddings are found in nearly every area of the world, and this Spanish version is served warm with a healthy dose of cinnamon and vanilla. Now for the best part–in the Instant Pot, instead of tending the stove for an hour, I can put the ingredients in and walk away. Easy and delicious!

Need a dessert but don’t have time to go to the store? You may already have everything you need to make this simple, warm and inviting treat. And if you don’t already, once you taste this simply marvelous comfort food, you’ll make a point of it from now on–promise!

There are as many versions of Arroz con Leche as there are grandmothers. Want to kick it up a notch? Add 2 1” strips of lemon or lime zest to the pot. You can also add raisins or even shredded coconut!

You may already have everything you need to make this simple, warm and inviting treat.


Ingredients:

  • 2 cups milk
  • 1 1/4  cups water
  • 1 cup long grain white rice, rinsed
  • 1/8  tsp salt
  • 1 14 oz can sweetened condensed milk
  • 1 tsp vanilla
  • Cinnamon for garnish

Instructions:

  1. Add milk, water, rice, and salt to the Instant Pot. Stir to combine.
  2. Secure the lid, making sure the vent is closed.
  3. Using the display panel select the PORRIDGE function for 20 minutes.
  4. When the time is up, let the pressure naturally release for 10 minutes, then quick-release the remaining pressure.
  5. Add about 3/4 of the sweetened condensed milk and the vanilla. Stir to combine.
  6. Taste and add additional sweetened condensed milk to taste.
  7. Serve warm topped with cinnamon.
