A Cherry Berry Shortcake

With this recipe, you will learn how to make a delicious, fruity dessert. This cherry berry shortcake serves 8 and is easy to make. It is a great way to finish off a delicious meal. Bring this dessert to a party or bake it to serve your guests.

Preparation

Begin by washing your hands and cleaning your area to make sure you have plenty of space to work with. Start by preheating your oven to 350 degrees F and let it heat up while you get set up. Get all your ingredients out and get ready to start cooking!

Bake the Biscuits

Grab an 8-inch square dish and line it with parchment paper. Arrange the biscuits side-by-side on the dish, covering the bottom. Bake the biscuits in the oven for around 20 minutes or until they are golden brown. When they are finished baking, take them out of the oven and set them out to cool. 

Prepare the Fruit

While the biscuits are baking, you need to prepare your fruit. Begin by cutting your strawberries. They don’t need to be too small – cutting them in 4ths is the best option. Next, remove the seeds of all your cherries and set them aside. 

In a large skillet, add all your fruit (strawberries, blackberries, and cherries), water, lemon juice, and ½ cup of sugar. Heat this to a simmer and let it cook for about 15-20 minutes. Be sure to stir periodically and keep an eye on it to make sure it doesn’t burn. When it is done cooking, set it to the side and let it cool a bit. You don’t want it to get cold, it should still be warm, but not too hot to touch or eat. 

Make the Whipped Cream

While the fruit is still cooking, grab a large bowl for your whipped cream. Beat the heavy whipping cream with an electric mixer (you can whisk it by hand if you do not have an electric mixer). Beat until it is frothy. At this point, add the remaining ¼ cup of sugar and beat until the whipped cream forms soft peaks. Set this aside.

Assemble and Enjoy!

Once your biscuits are cooled, cut them in half lengthwise (like you would a bagel). Add a scoop of the cooked berries to the bottom piece of each biscuit. Be sure to save some of the syrup and set it to the side. Place the top half back on each of the biscuits, making them like little sandwiches. 

To serve the shortcake, spoon some whipped cream on top and drizzle them each with the leftover fruit syrup. Enjoy!
