Glazed carrots are a simple and elegant side dish that will shine at your table. Tender carrots are tossed in a thyme butter sauce with honey and just a touch of parsley for brightness. Perfect for the holidays, but easy enough for everyday, these honey herb glazed carrots are sure to be a hit!

These sweet and simple glazed carrots are a simple side dish that add a bit of wow to your dinner. The natural sweetness of the carrots is given some amplification with a delicious glaze. Even big kids will be asking for seconds of these amazing glazed carrots. They’re a perfect side for Thanksgiving, Easter, Christmas, Hanukkah or just Thursday!

Pro Tip: In step 5, drain the carrots and dry the pot before adding the remaining ingredients and glaze will form faster.

Ingredients:

  • 1 cup water
  • 1 lb baby carrots
  • 2 tbsp butter
  • 1 tbsp fresh thyme
  • 1 tbsp finely chopped fresh parsley
  • 1/4 tsp kosher salt
  • 1/3 cup honey
  • Additional fresh thyme for garnish

Instructions:

  1. Pour one cup of water in the Instant Pot and insert the steam rack. Place carrots in a steamer basket (we love this one: https://amzn.to/2CDxNd1) and lower steamer basket onto the steam rack.
  2. Secure the lid, making sure the vent is closed.
  3. Using the display panel select the MANUAL function*. Use the +/- keys and program the Instant Pot for 3 minutes.
  4. When the time is up, quick-release the pressure and carefully remove the carrots.
  5. Drain the liquid from the pot. Add remaining ingredients to the pot and stir to combine. Add in cooked carrots and stir to coat.
  6. Turn the pot off by selecting CANCEL, then select the SAUTE function. Cook and stir for 2-4 minutes to desired consistency.
  7. Serve hot garnished with additional fresh thyme.

*The MANUAL and PRESSURE COOK buttons are interchangeable.
