Instant Pot Black Beans and Chicken Apple Sausage

I love cooking chicken-apple sausage, but I hate splattering grease all over my kitchen. With the Instant Pot, the high sides of the pot keep the grease in as well as locking in the flavor lightening fast–about 15 minutes start-to-table.

Want to serve a crowd? Double or even triple the recipe, but cut the sausage lengthwise into quarters before slicing, and brown the sausage in batches. No need to adjust the cook time though…zero minutes still works, but it will take a little longer to come to pressure.

Have you discovered chicken-apple sausage yet? Yes, there’s actually chunks of apple and usually, a bit of cinnamon built right into the sausage. Even picky kids adore sweet-and-savory chicken apple sausage. There’s a variety of brands available, and depending on where you live, you may have to visit the meat counter to find it. The key to this recipe is Ranch-Style black beans (like these: https://amzn.to/2CWOW2u). These beans already have seasonings like salt, onion powder, garlic powder and other spices built in. For best results, store the cans upside down in the pantry or simply shake them before opening. This makes it much easier to get the beans out of the can with no fuss.

Ingredients:

  • 1 1/2 tbsp olive oil
  • 12 oz package chicken & apple sausage, sliced into 1/3″ disks (we like Aidells https://amzn.to/2J9VHhE)
  • 2  15 oz cans Ranch Style black beans, not drained (https://amzn.to/2CWOW2u)
  • 1 1/2 tsp each onion salt and onion powder
  • 1/3 cup brown sugar
  • 1/4 cup sour cream
  • 1 tbsp chives, snipped

Instructions:

  1. Add olive oil to the Instant Pot. Using the display panel select the SAUTE function.
  2. When the oil is hot, add sliced sausage, Cook and stir 3-4 minutes until lightly browned.
  3. Add beans, onion salt, onion powder, and brown sugar.
  4. Using the display panel select the MANUAL function*. Use the +/- keys and program the Instant Pot for 0 (zero) minutes.
  5. When the time is up, quick-release the remaining pressure.
  6. Serve topped with a dollop of sour cream and a dusting of chives.

*The Manual and Pressure Cook buttons are interchangeable.
