HOW TO MAKE HAM BONE SOUP
Preparation time: 10 minutes
Cook time: 40 minutes
Servings: 6
Ingredients:
- 1 Tbs butter
- 1 yellow onion, peeled and chopped
- 3 carrots, peeled, quartered and sliced
- 3 stalks of celery, sliced
- 1 ham bone
- 6 Cups chicken stock (low sodium)
- 1 pound of russet potatoes, peeled and diced
- 2½ Cups diced ham
- 1 Cup heavy cream
- 3 Tbs corn starch
- ¼ Cup chopped parsley
- salt and pepper to taste
Directions:
- Place a large pot over medium heat. Add the butter and melt.
- Add the onions and cook, stirring occasionally, until just tender, 3-4 minutes
- Add the carrots and celery and cook for 4-5 minutes. Season vegetables to taste with salt and pepper.
- Pour in the chicken stock and add the ham bone and potatoes. Lower heat to a simmer and cook for 20-25 minutes, or until potatoes are just tender.
- Stir in the ham and heavy cream. Cook for 3-4 minutes or until ham is warmed through.
- Mix the cornstarch with ¼ cup of cold water and stir until cornstarch is dissolved. Add the cornstarch to the soup and cook for 2-3 minutes or until soup has thickened.
- Taste and add more salt and pepper if needed. Remove the ham bone and discard. Stir in the parsley and serve.
Notes:
- You can also easily make split pea soup by switching out the cream by adding a 1-pound bag of split peas, rinsed and picked through, after the vegetables are tender and simmer with the ham for 1 hour until your soup is thick.
