Chicken Enchilada Casserole

This Enchilada Casserole is the most simple dish I have ever stumbled upon. All you need if 4 ingredients, and 30 minutes out of your day.

You can take this cheesy goodness to any potluck and be loved forever. Just be prepared to make it again!


Ingredients:

  • 1 14 oz jar or can Enchilada sauce
  • 2 to 3 cups shredded Monterey Jack cheese, shredded
  • 6 corn tortillas, 6 inch each
  • 2 chicken breasts

Directions:

1.Preheat oven to 375 F degrees.
2. Start layering the casserole.
3. Pour enchilada sauce over the bottom of a 9×13 baking dish.
4. Place 2 tortillas on the bottom, top with 1/3 of the chicken and 1/3 of the remaining sauce.
5. Sprinkle with 1/3 of the cheese and repeat starting with 2 more tortillas, then chicken, sauce, cheese.
6. Repeat with the last layer with the remaining ingredients, tortillas, chicken, sauce, and cheese.
7. Bake for 20 to 30 minutes uncovered, until bubbly and cheese has melted and started to brown on top.
8. Serve warm and enjoy.
