Cheesy Shrimp Crostini

Cheesy Shrimp Crostini. Do I even need to say any more?! These rich, creamy, crostini’s are perfect for a hot summer day!

The flavors are so on point, they will be gone in no time! Seriously though..these were gone before anyone had a chance to get seconds!

The best part is how simple they were…and after one bite in, I found my new favorite snack.


Ingredients:

  • 1/2 Lb Uncooked shrimp
  • 1 Tbsp Old Bay
  • 2 Bay leaves
  • Kosher salt
  • Cracked black pepper
  • 1 loaf Baguette bread, sliced on an angle into 1/2 inch
  • 1/2 CUP Mayonnaise
  • 1/4 CUP Fresh dill, chopped
  • 1/4 CUP Fresh chives, chopped
  • 2 Cloves garlic, minced
  • 1 CUP Cheddar jack cheese

Directions:

  1. Preheat oven to 350°F.
  2. Remove the shells from the shrimp and set shrimp aside.
  3. Add Old Bay, bay leaves, salt, and pepper to the pot.
  4. Fill with water and bring to a boil.
  5. Once the water is boiling carefully drop the shrimp into the pot.
  6. Cook until pink, approx 3 minutes.
  7. Drain and place shrimp in a bowl of cold water to stop the cooking process.
  8. Drain and dice the shrimp.
  9. Place the shrimp in a medium bowl with the mayo, garlic, chives, dill, and cheese.
  10. Season with salt and pepper to taste.
  11. Spread a tablespoon of the shrimp mixture onto each bread slice.
  12. Pace them on a baking sheet and bake for 10 minutes.
  13. Serve warm.
