Mole is a traditional sauce originally used in Mexican cuisine. The word mole is an ancient word for mix, as the typical mole has an unusual blend of ingredients, often including chili peppers, cumin and chocolate. Tradition holds that the first mole was prepared for the archbishop of Puebla early in Mexico’s colonial period.

Traditional moles simmer for hours and hours, but through the magic of pressure cooking, this mole pork develops full flavors in a fraction of the time. Try this mole pork over rice, with tamales, in a burrito bowl or on a salad. It’s not just for tacos!

Getting the right cut of meat is essential for great pulled pork. A well-marbled pork butt or shoulder is going to give you the tender fall-apart texture you’re looking for. Pork loin and tenderloin are not the right choice for this recipe–they are too lean and lack the collagen needed to achieve the luscious juiciness of proper pulled pork.
