Instant Pot Quick Party Meatball Appetizer

I’m always on the lookout for fast and easy recipes for my Instant Pot (get yours here: https://amzn.to/2QlkaDf), and this amazing party meatball appetizer brings together frozen meatballs with a pair of unlikely flavors (BBQ and jelly…who knew?) to create a tasty appetizer you’ll be proud of!

Who can resist a platter of cocktail meatballs? Just break out the toothpicks to get the party started. These are perfect for game day, potluck, parties, or any time you need a quick snack. You can even turn them into a main dish by serving them over sticky rice.

Pro Tip: You can make this recipe with practically any jelly you have on hand, including raspberry, red currant, blackberry or even apricot!

Ingredients:

  • 1 cup water
  • 32 oz frozen cooked meatballs
  • 12 oz grape jelly (or raspberry or red currant)
  • 1 1/2 cups BBQ sauce
  • Chopped chives for garnish (optional)

Instructions:

  1. Pour 1 cup water in the Instant Pot, followed by the steam rack.
  2. Add frozen meatballs to a steamer basket and carefully lower the steamer basket onto the steam rack.
  3. Secure the lid, making sure the vent is closed.
  4. Using the display panel select the MANUAL function*. Use the +/- keys and program the Instant Pot for 0 minutes.
  5. When the time is up, let the pressure naturally release for 10 minutes, then quick-release the remaining pressure.
  6. Carefully remove the steamer basket and steam rack from the pot and discard cooking water.
  7. Turn the pot off by selecting CANCEL, then using the display panel select the SAUTE function.
  8. Add grape jelly and BBQ sauce to the pot. Cook and stir until melted and combined.
  9. Return meatballs to the pot and toss to coat. Serve warm garnished with chopped chives (optional).

*The MANUAL and PRESSURE COOK buttons are interchangeable.
