Instant Pot Molten Mocha Lava Cake

I love to wow my guests with this luxurious, show-stopping lava cake. Molten lava cakes hide a core of gooey chocolate inside their sponge shell. And they are surprisingly easy to make in an Instant Pot (get yours here: https://amzn.to/2QlkaDf)!

As our friends at Instant Pot point out, there was a time in the early 2000s when just about every celebrity chef claimed to have invented the molten cake, the lava cake, or whatever they called it. And in this version, super-light cake is surrounded by a liquid chocolate center, with just the right touch of rich coffee flavor added in. Sinfully delectable!

And did we mention it’s fast to make? These gorgeous individually-sized desserts can be on the table in only 25 minutes. That makes them perfect for a dinner party, a weeknight meal, or whenever those chocolate cravings hit!

Pro Tip: Stir frequently in step 1 to avoid burning the chocolate, then work quickly to incorporate the other ingredients before the mixture cools.

Ingredients:

  • 1 stick butter, cut into 8 pieces
  • 1 cup semi-sweet chocolate chips
  • 1 tbsp instant coffee granules
  • 1 cup powdered sugar
  • 3 eggs
  • 1 egg yolk
  • 1 tbsp vanilla
  • 1/4 cup + 2 tbsp flour

Instructions:

  1. Place butter, chocolate chips and coffee granules in a large bowl and microwave 30 seconds at a time until melted, stirring thoroughly after each 30 second interval.
  2. Add each additional ingredient one at a time, stirring after each addition until smooth.
  3. Thoroughly coat 4 6-oz bowls or ramekins with non-stick spray.
  4. Spoon batter into bowls or ramekins evenly.
  5. Put 1 cup of water and the trivet in the Instant Pot.
  6. Place bowls or ramekins on the trivet–you may have to stack three on the bottom and one on top.
  7. Secure the lid, making sure the vent is closed.
  8. Using the display panel select the MANUAL function*. Use the +/- keys and program the Instant Pot for 9 minutes for ceramic or 11 minutes for glass.
  9. When the time is up, quick-release the remaining pressure.
  10. Immediately invert the ramekins or bowls on individual plates. Serve alone or with vanilla ice cream.

*The MANUAL and PRESSURE COOK buttons are interchangeable.
