Instant Pot Melt-in-Your-Mouth Beef Gyros

I love going down to the corner Greek place for gyros, so when if found out I could make these amazing Greek-style wraps at home, I was super excited! A gyro is a Greek sandwich made of slices or strips of roasted meat, served on pita bread with a cucumber-yogurt sauce. Traditionally made with lamb or a mix of lamb and beef, this recipe uses inexpensive beef chuck that turns mouthwateringly tender when pressure cooked.

For an authentic look, serve wrapped in paper or foil and include your choice of sliced onions, tomatoes and lettuce seasoned with a bit of salt and pepper. Delicious!

Can’t find prepared tzatziki sauce? Combine 1 cup plain greek yogurt, 1 cup grated cucumber, 1 tbsp dried dill and then add salt and pepper to taste. Tzatziki sauce does tend to gets watery when it’s heated, so let the meat cool just a bit before plating.

This recipe uses inexpensive beef chuck that turns mouthwateringly tender.


Ingredients:

  • 1/3 cup beef broth
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp dried oregano leaves
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 1/2 lbs well-marbled beef chuck roast, sliced into 1/4″ strips strips across the grain
  • 1 onion, sliced thin

For Serving:

  • Pita bread
  • Lettuce
  • Sliced tomatoes
  • Prepared tzatziki sauce (see notes)

Instructions:

  1. Add all ingredients except beef to the pot. Stir to combine.
  2. Add beef to the pot. Stir to coat, then secure the lid, making sure the vent is closed.
  3. Using the display panel select the MANUAL function*. Use the +/- keys and program the Instant Pot for 20 minutes.
  4. When the time is up, let the pressure naturally release for 10 minutes, then quick-release the remaining pressure.
  5. Serve beef on pita topped with lettuce, tomato and tzatziki sauce

*The MANUAL and PRESSURE COOK buttons are interchangeable.
