Instant Pot Jalapeño Cheddar Cornbread

A delicious combination of spicy and sweet, I love this buttery and cheese-packed cornbread. It’s the perfect side and cooked in the Instant Pot, I’m always guaranteed to get a moist and flavorful outcome.

Who doesn’t love cornbread? It’s the ultimate comfort food. It goes wonderfully with chili, soup, BBQ, or buttered vegetables.

This recipe uses the pot-in-pot method of cooking to achieve a delicious outcome. Be sure not to overmix the batter or you will likely end up with a wet center. If that happens, you can reset the Instant Pot for an additional 10 minutes or pop it in the oven at 350 for 10-15 minutes.

Remember to remove the seeds from the jalapeno unless you really love it spicy. Alternatively, you can cool it down further by removing the whitish inner veins of the pepper before dicing. Want to cool it off a touch more? Omit the jalapeno and substitute a half teaspoon of red pepper flakes.
