Instant Pot Crispy Frittata Florentine

I don’t normally think “crispy” when I think of my Instant Pot (get yours here:, but this recipe is a delicious exception. Crispy potatoes and bacon combine with fluffy eggs for a perfect texture balance you will love.

It’s all thanks to the Sauté function. Rendering the bacon yields just enough fat to cook the potatoes to crispy perfection. Then, pressure-cooking the eggs on the low pressure setting yields a light and fluffy result you just can’t get from conventional methods.

Frittata is an egg-based Italian dish, similar to an omelet, but with fillings mixed into the eggs rather than folded in the center. Florentine refers to dishes containing spinach. The spinach in this dish gives it an extra boost of nutrition and color, but your vegetable-hater will hardly know its there when it’s surrounded with crispy bacon and potatoes.

The best part? This marvelous meal is on the table in only 25 minutes, leaving only one pot to clean up!
