Instant Pot Cheesy Creamy Ziti

Pasta is one of my favorite things to make in the Instant Pot (get yours here: https://amzn.to/2QlkaDf). Because there’s no evaporation in the cooking process, you can cook the pasta directly in the flavors of the dish, instead of just plain old water.

Broth and cream are the base of this amazing flavor combo, then tangy tomato sauce and a duo of heavenly cheeses join the party. A sprinkling of spinach brightens up the whole dish and voila! A divine dish your whole family will love.

And what makes this dish even better is that it is on the table in less than 30 minutes. It’s weekend taste on a weeknight schedule!

Ingredients:

  • 1 1/4 cups chicken (or vegetable) broth
  • 1 cup heavy cream
  • 2 tsp garlic, minced
  • 1 tsp kosher salt
  • 1/2 tsp pepper
  • 12 oz dried ziti pasta
  • 1 1/2 cups pasta sauce
  • 1 cup parmesan cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1 1/2 cups fresh spinach, finely chopped (optional)

Instructions:

  1. Layer broth, cream, garlic, salt, pepper and pasta, in that order, in the pot–do not stir. Ensure all pasta is submerged.
  2. Secure the lid, making sure the vent is closed.
  3. Using the display panel select the MANUAL function*. Use the +/- keys and program the Instant Pot for 6 minutes.
  4. When the time is up, let the pressure naturally release for 6 minutes, then quick-release the remaining pressure.
  5. Stir in the pasta sauce.
  6. Add the cheeses, 1/3 cup at a time, stirring after each additional until fully melted and incorporated.
  7. Serve hot garnished with finely chopped spinach (optional).

*The MANUAL and PRESSURE COOK buttons are interchangeable.
